JCab – Toscana IGT Cabernet Sauvignon 2023
100% Cabernet Sauvignon – Azienda Agricola Il Colle
JCab is my very first 100% Cabernet Sauvignon, born from the first harvest of my newly planted vineyard in San Casciano in Val di Pesa, in the heart of the Chianti Classico area. The 2023 vintage marks the beginning of a new chapter for my winery, reflecting my desire to explore new possibilities while remaining deeply connected to the land I proudly call home.
I aged JCab for almost three years in 225-litre French oak barriques, allowing the wine to develop elegance, depth, and complexity while preserving its natural freshness. My goal was to create a Cabernet Sauvignon that combines power and finesse, expressing the vineyard through a harmonious balance of ripe fruit, vibrant acidity, and refined tannins.
I named this wine after Jacob, my loyal dog and faithful companion through countless days in the vineyard and in everyday life. His unwavering presence, curiosity, and companionship inspired this project from the very beginning, making every bottle a tribute to the special bond we share.
Tasting Notes
- Colour: Deep ruby red with violet highlights.
- Nose: Rich and expressive, with aromas of blackcurrant, blackberry, and black cherry, complemented by elegant notes of cedar, tobacco, sweet spices, vanilla, and dark chocolate developed through extended oak ageing.
- Palate: Full-bodied, refined, and beautifully balanced. Firm yet polished tannins are supported by lively acidity, leading to a long, persistent, and elegant finish with excellent ageing potential.
Serving Suggestions
- Serving temperature: 16–18 °C
- Food pairing: I recommend pairing JCab with grilled and roasted red meats, Florentine steak, game, lamb, aged cheeses, and traditional Tuscan cuisine.
- Cellaring potential: More than 10 years when stored in a cool, dark place.
